Crush pads, cellars, still houses and tasting terraces have different drainage duties. Compare seasonal flow, solids, washdown temperature, traffic and finish requirements by zone, and identify where the project needs dedicated hygienic drainage.
Map production, visitor and vineyard drainage separately
A winery may combine seasonal crushing with year-round cellar work, bottling and hospitality. A distillery may receive grapes, grain, molasses or purchased spirits; its waste streams depend on the process. Map crush and press areas, fermentation and barrel washing, stills and spirit transfer, packaging, guest routes and outdoor service areas before selecting drains. Harvest duration and production schedules are site inputs, not fixed design assumptions.
Identify each destination on the drainage plan: process wastewater, domestic sewage, stormwater, subsurface drainage and contained spills. Use grading, curbs and roof-water routing to limit mixing. A terrace interceptor and a production trench can look similar while requiring different materials, cleaning procedures and discharge connections. A shared channel should not carry dirty production water through a cleaner room or guest route just because its grate can be changed.
Control solids, heat and cleaning exposure at the source
- Crush pads and press decks: collect pomace, stems and skins before rinsing. Capture remaining solids in accessible screens or baskets sized for flow and the planned emptying interval. Sending bulk pomace down a wide grate simply moves the blockage and waste-handling problem. Consider covers and run-on diversion to reduce the rain entering dirty work areas; see EPA’s food and beverage stormwater guidance.
- Cellars, barrel wash and bottling: distinguish floor washdown from equipment discharge. Direct equipment wastes to the approved receptor or dedicated pipework, with indirect connections where the adopted plumbing rules require them. A floor channel is not automatically the receiving system for every tank emptying or cleaning-in-place cycle.
- Distilling: keep spent grain and concentrated stillage in designated recovery or waste-handling systems. Assess cooling water, condensate and boiler blowdown separately; apparent clarity does not establish that water is uncontaminated or acceptable for storm discharge. Capture concentrated spirit losses rather than washing them into the general drain.
- Chemistry: list acids, alkaline cleaners, sanitizers and alcohol concentration, including dilution, contact time, rinsing and mixed residues. pH alone does not establish resistance. Check body, welds, rails, grates, coatings, joints, sealants and downstream piping. The ACO stainless resistance table is an exposure-specific screening tool, not approval of an entire installation.
- Heat: measure peak liquid temperature at the drain and duration of exposure, including hot dumps, steam cleaning and repeated thermal cycling. Obtain full-assembly confirmation under the intended traffic. Neither a stainless rail nor a mineral-bound body establishes hot-process suitability.
- Openings: balance solids capture with workers’ footwear, trolley wheels, slip resistance and required accessibility. No opening width guarantees that pomace will not bridge. Use source capture and a cleaning trial with representative solids; preserve the required pedestrian opening geometry even during harvest.
Choose the wastewater and spill destination before the outlet
Crush-pad juice, washwater, lees and stillage need an approved wastewater route. A sewer connection requires acceptance by the receiving utility; onsite treatment, land application, reuse or offsite hauling each needs the applicable authorization. A screen captures coarse solids but leaves dissolved organic load. Depending on measured waste characteristics and discharge limits, the design may need separate strong-waste storage, equalization, cooling, pH control and biological treatment.
EPA pretreatment prohibitions address sewer obstruction, interference from oxygen-demanding wastes or heat, corrosive discharges and fire/explosion hazards. They do not make a sanitary sewer an unrestricted disposal route. Obtain the local limits, sampling point and acceptance conditions before setting outlet elevations.
Keep uncontaminated roof water separate where feasible. Rain touching winery waste or processing equipment needs evaluation as contaminated water. For a jurisdiction-specific example, California’s Winery General Order guidance treats this contact stormwater as process water and expressly excludes distilleries and stillage from that order. It is not a nationwide permit or a distillery disposal approval.
Spirit storage and transfer need a separate spill design. Determine the actual liquid’s flashpoint, concentration, credible spill volume and possible firewater contribution. Coordinate containment, safe collection/removal, ventilation and ignition control with the fire-protection design and authority having jurisdiction. OSHA’s ethanol-processing guidance explains the flammable-liquid hazard; applicable requirements depend on the operation and quantities. An ordinary open trench can spread a release. A contained sump or curbed area without an open sewer connection may be appropriate; any isolation or emergency-drain arrangement needs an accessible, documented operating plan.
The listed ACO Oleopator and Spill Control oil-water separator warrant review for an identified oily service-area stream. They are not evidence of treatment for dissolved sugar, alcohol, acidity or stillage. Oleopator’s manual describes oil separation and its operating limits. The listed Aquaduct Double Containment addresses leakage from a primary trench through an outer trench and inspection space, as shown in ACO’s catalog. That feature does not establish ethanol compatibility, fire safety or sufficient storage for a tank spill.
Vineyard drainage and clean site runoff
Surface grading, swales and channels intercept runoff; subsurface drains address water within the soil. Choose vineyard drain depth, spacing and outlet from soil investigation, water-table behavior and the crop’s needs. Do not prescribe one tile layout for every clay soil or send process wastewater into agricultural drainage.
A conventional French drain uses a permeable trench, with a collection pipe where needed. NDS EZflow is a gravel-free option in the manufacturer’s wider range; confirm supply and the appropriate configuration. Catch basins can collect road or yard low points, but their sediment storage, outlet and complete load-bearing installation must match the location. Tractor washing is a separate wastewater activity. Pop-up emitters and dry wells may serve suitable uncontaminated runoff only where the outlet or infiltration is allowed. Verify soil infiltration, groundwater separation, setbacks, storage, maintenance and overflow; lack of a daylight outlet alone does not justify a dry well. Keep roof drainage and emergency overflow coordinated with the roof design.
How to size a crush-pad drain
Survey slab elevations, thresholds, equipment positions and outlet inverts. A controlled water test can reveal local ponding. Establish floor fall with the floor-system designer and sanitation plan, accounting for carts and accessible routes. Built-in channel fall moves water inside the channel; it does not correct a flat or reverse-sloped floor. Sloped ACO PowerDrain S100K sections provide 0.5% internal fall, while Dura-Slope uses 0.7% sloped sections alongside neutral sections. Check the actual sequence and increasing excavation depth.
Illustrative rainfall volume: assume a 60 ft × 40 ft impervious pad, complete runoff and one inch of rain. Volume = 2,400 sq ft × (1/12) ft × 7.4805 gal/cu ft ≈ 1,496 gallons. A separately routed 5,000 sq ft roof would produce about 3,117 gallons under the same assumption; combining it with the process pad adds that volume to collection and possible wastewater handling.
Illustrative peak flow: at an assumed uniform rainfall intensity of 2 in./hr, the pad’s screening runoff rate is 2,400 × (2/12) × 7.4805 ÷ 60 ≈ 49.9 gpm. If two hoses are each measured at 12 gpm and run together, add 24 gpm: approximately 73.9 gpm before any equipment discharge. Those hoses alone use 1,440 gallons in an hour. These are hypothetical inputs, not typical hose ratings or a local design storm. Select the required rainfall frequency/duration and assess credible coincident operations; hose diameter alone does not determine flow.
Record measured nozzle flows and equipment discharge profiles, including the peak within a tank-dump cycle. Distinguish event volume for storage from instantaneous flow for conveyance. Check inlet capture and bypass, channel capacity with a realistic blockage allowance, outlet losses, pipe slope and receiving water level together. Confirm a controlled overflow route that protects buildings and keeps contaminated water within the approved collection system.
Load class on a pad that sees a loaded bin forklift
EN 1433 class numbers state a test force in kilonewtons, not a permissible vehicle weight. NDS letter classes use separate traffic and pressure guidance; NDS Class B does not establish EN 1433 B125. H-20, HS-25 and AASHTO M306 also need their own applicable documentation. See the load recommendation guide.
- Tasting terraces and paths: include service carts and maintenance equipment as well as pedestrians, with accessible openings where required.
- Cellars and barrel rooms: record loaded pallet-jack and cart wheel dimensions and reactions; small hard rollers create concentrated loads that a general forklift label does not describe.
- Crush pads and forklift lanes: provide loaded axle/wheel reactions, tire type, crossing angle and speed, turning, braking and crossing frequency. The pallet or bin weight alone is insufficient.
- Tanker and dock areas: account for the heaviest authorized traffic. Keep landing gear, outriggers, jack stands and equipment supports off drains unless the actual concentrated load and support arrangement are explicitly approved.
Specify a documented assembly: body, grate, frame/rail, locks, basin and surrounding support. A stronger replacement grate does not upgrade an unverified channel. Follow the manufacturer’s concrete, reinforcement, joint and pavement-finish details, including the project’s ground conditions. A grate recessed to the specified finish still carries wheel load. ACO’s installation manual explains this system and support dependence.
Match collection geometry to the floor and cleaning method
Linear drains intercept sheet flow along pad edges, wash bays and wet/dry boundaries. Point drains and floor sinks suit local low points and equipment receptors, provided the floor falls to them and the connection is appropriate. A contained spill area may need controlled removal rather than an open drain. Compare these layouts before committing to a long trench.
Grated channels give direct access for inspection and removal of lodged solids. Slot channels reduce long grate-lifting tasks but require effective access ports, cleaning tools and a verified cleaning procedure. Compare that operating method with the listed ACO slot and openable channels using the actual solids and sanitation schedule; it does not establish superior hygiene or installed capacity.
Choose grates by the complete assembly’s load and chemical suitability, opening geometry, wet slip performance, lifting weight and locking method. Ductile iron, cast iron and steel options each require model-specific review; material alone does not establish safe handling or traffic capacity. Raised atrium grates belong away from walking and wheeled routes.
Where ADA opening requirements apply, the finished surface must not pass a sphere larger than 1/2 inch, and elongated openings must have their long dimension perpendicular to the dominant travel direction. ADA 302.3 does not make “heel-safe” a universal substitute for checking the opening. Guest/production crossings need both accessibility and traffic suitability.

ACO’s winery brochure presents stainless drainage across production zones. Check cleaning access, outlet, trap/vent arrangement, floor connection and documented hygienic features for each model. Compare 304 and 316L using the real chemical schedule, not the room name; ACO’s alloy guide explains the corrosion-resistance distinction. No alloy or family name guarantees every required certification. SlotDrain 20’s standard opening is 20 mm; obtain the documented accessible configuration where needed rather than treating that opening as compliant with the 1/2-inch limit.

The nominal 4-inch internal-width family uses polymer-concrete bodies; K100 has galvanized rails and KS100 grade 304 stainless rails. ACO documents sloped and constant-depth sections, locking options and matching basins. Select rail and body compatibility separately. Stainless rails do not turn this into a stainless sanitary channel, and acidic washdown is not an automatic KS100 approval. Check exact section depths, outlet elevation and the grate/locking configuration.

Compare PowerDrain when traffic requires a heavy-duty assembly. Obtain the selected S100K, S200K or S300K submittal; a family maximum is not a rating for every configuration. Heavy-load capability does not establish hygienic, chemical or spill-containment suitability.

Dura-Slope uses HDPE channels with sloped and neutral sections. The current NDS catalog details matched grates, frames and accessories. It expressly excludes the DS-240 trash bucket with the DS-200H frame; do not assume a basket fits a heavy-duty configuration. Indoor or outdoor location alone is not the suitability test: check temperature, chemicals, traffic and cleaning. For hygienic production, compare the purpose-built stainless options above.

Compact threshold collection · verify capture and installation depth
This nominal 2-inch internal-width polymer-concrete family is worth comparing where space is limited. Include surround, outlet and pipe clearance in the depth check; verify capture and discharge rather than imposing an arbitrary maximum run length. ACO states that 50 mm grates fall outside EN 1433’s scope and are tested using its guidelines; do not describe K50 as an EN 1433-certified assembly. NDS Slim Channel and Spee-D are further site-drainage candidates, not interchangeable dimensions or ratings.
Catch basins and kitsView Products
Site low points and accessible sediment collection
Compare 12-inch, 18-inch and 24-inch basins by inlet capture, usable sediment storage, outlet level and practical cleaning access. Dimensions alone do not establish capacity or an acceptable clean-out interval. Kits and outlet fittings need a matched pipe and support detail. A cast-iron grate does not make a landscape basin suitable for forklifts; heavy yards may need engineered concrete inlets and matching castings. Use sanitary receptors where the production-room design requires them.
Other listed industrial options: Josam Pro-Plus 100 and Pro-Plus 200 use SMC/GRP polyester-composite bodies. In Josam’s chemical chart, “ethanol” is marked not resistant and “wine” resistant at the stated room temperature of 78°F; neither entry gives concentration. Do not transfer the wine result to spirits or infer a safe dilution threshold. Obtain written confirmation for the actual stream. The 2026 guide also contains conflicting Class F/Pro-Snap/ductile-rail notes; resolve the exact rail and locking assembly before specifying a high-load run. Listed ABT systems and EJ/U.S. Foundry castings may be compared where the project calls for them; no brand name establishes equivalence.

Questions from winemakers and distillers
What grate opening keeps pomace from blinding off the drain?
No fixed opening guarantees this. Remove bulk pomace before rinsing, capture residual solids in accessible screens or baskets, and test cleaning intervals with the real waste. Balance opening size with footwear, wheels and required accessibility. Where ADA 302.3 applies, openings must not pass a sphere larger than 1/2 inch and elongated openings run perpendicular to dominant travel. Widening a grate does not replace solids management.
Can crush pad water go into the storm drain?
Do not route juice, process washwater or contaminated runoff to a storm drain without specific discharge authorization. Establish an accepted sewer, permitted onsite treatment/reuse or authorized offsite route. Keep uncontaminated roof water separate where feasible. A basket or oil-water separator does not establish treatment of dissolved organic waste, alcohol, acidity or heat.
How hot can the water be before it damages the channel?
Use the selected product’s documented limits for the complete assembly. Measure peak temperature, duration, cleaning chemicals and thermal cycling at the drain; include seals, joints and piping in the review. Purpose-built stainless drainage is worth comparing for hot production areas, but neither stainless nor any general material name guarantees compatibility with every cleaning cycle.
Can Dura-Slope be used inside a cellar?
Indoor location alone does not rule it in or out. Check the exact HDPE channel, grate, frame, joints and installation against traffic, temperature, chemicals and required cleanability. Compare sanitary stainless drains where the room requires hygienic production drainage. A metal grate does not change the channel body or establish sanitary suitability.
What load class do I need for a crush pad that sees a loaded bin forklift?
Use actual loaded wheel or axle reactions, tire dimensions and material, crossing speed, turning and braking to select a documented assembly. Include hard pallet-jack rollers where present. The bin weight or an EN test-force number is not a vehicle rating. Verify channel, frame, grate, locking and support together; see the load recommendation guide.
Can the washdown drain also contain an ethanol spill?
Only if the complete spill design explicitly provides that function. Determine concentration, flashpoint, credible release and firewater volume; verify materials, isolation, collection capacity and safe removal. General-purpose drainage and oil separation do not establish ethanol containment. Resolve fire-protection and wastewater requirements before connecting a spirit-handling area to other drains.
